I find it fascinating though that "one man, one vote" doesn't sound as 
bigoted to you as "one caucasian, one vote" would.

My conjecture is that it all comes down to linguistics and our ages (30 & 
81).  The English language (as always) is changing and the two of us speak 
very slightly different versions of it.  "Manhole cover" is a part of the 
language for both of us and would sound pretty forced if we replaced it 
(not that I wouldn't -- I'm all about proactively changing the language). 
"One man, one vote", however, left the language somewhere in between your 
acquisition of English and mine.
